Bib and Tucker is an old saying that means to put your best clothes on, putting on the Ritz. 35 Maple Street Spirits now has a bourbon that tries to emulate that. This whiskey is aged in Tennessee for at least 6 years in #1 char barrels. Most distilleries use a #3 or #4 char, but they believe using a #1, barely a toast, is the way to go. This allows for more contact with the wood, getting more leathery flavors.

Nose: Corn nuts, vanilla, leather, caramel, orange, apricot

Palate: Ethanol, Butterscotch, ginger, oak, fruit. Possibly a very light banana/peach

Finish: Ginger remains, butterscotch moves toward caramel. Some orchard fruit hides in the back.

Final note: This is a 6 year age statement, but supposedly 7+ year bourbon. While it has some good sugar notes, it still has a young taste to it. The first time I had it, I did not like it at all. It has grown on me, but still not a solid choice. I suspect they got some of the Dickel barrels that no one else wanted, counting on blending to smooth it out. Close, but not quite. I think a heavier char could have really helped this.
